This past weekend I made the most delicious triple chocolate cupcakes from Giada on Food Network. I’ve found that chocolate cupcakes can tend to wind up tasting really dry, but these cupcakes did not have that issue at all. The cake was moist and flavorful and rather than a traditional icing, the cupcakes were dipped in ganache to form a glossy chocolaty top.
The main ingredients in the cupcake were unsweetened chocolate, chocolate chips and mascarpone cheese. I think the mascarpone was what added the real moistness to the cake. The icing was a simple ganache made from chocolate chips, cream and vanilla extract.
